CHOCOLATE BERRY LAYER CAKE

Chocolate Sponge

4 eggs, room temperature
100g caster sugar
1 tbsp vanilla bean paste
95g plain flour, sieved
15g dutch processed cocoa powder, sieved
pinch of sea salt
20g unsalted butter
60g good quality milk couverture chocolate, chopped

220g thickened cream (A)
1 tsp vanilla bean paste
35g liquid glucose
220g good quality white chocolate 28%
33g thickened cream (B)
