Peelers: Which one, and for what?

Peeler blades are either ‘fixed’, which don’t move or ‘swivel’, and will rotate while you use them. Fixed blade peelers are more steady and swivel blades can be operated back and forth and work much faster.

Handles differ too, straight or Y-shaped. Straight handles feature vertical blades that offer easy maneuverability around the ends of vegetables and are easier to use on smaller produce. Y-handles have horizontal blades that are easier to control and work much faster on long vegetables, excellent for peeling carrots.
